Date, Mango and Macadamia Loaf

Whenever I make this moist loaf I think of Queensland. You can switch the mango for pineapple, peac hes or bananas.


Ingredients

Serves: 20

2 cups (150g) plain or gluten free flour

2 teaspoons ground cinnamon

2 teaspoons baking soda

1/2 teaspoon salt

1¼ cups (250g) brown or coconut sugar

2 eggs

3/4 cup (190ml) vegetable oil

2½ cups mangoes, peeled, seeded and chopped (about 2 Bowen/Kensington Pride-sized mangoes)

Hand full of macadamias halved

1 teaspoon lemon juice


Directions

Preparation:20min › Cook:1hour › Ready in:1hour20min

1.Preheat oven to 180 degrees C. Combine all of the dry ingredients.

Beat eggs with oil and add to flour mixture. Add mangoes, lemon and raisins.

2.Pour into 2 greased 20x10cm loaf tins. Cook for about 60 minutes or until toothpick comes out clean.


You can serve this buttered, with yogurt or plain.
